Chia Seed Pudding


Prep Notes

Chia seed pudding can be a nice breakfast, or an afternoon snack, or a dessert.  It is very easy to prepare.   I usually make mine with two cups of unsweetened almond milk.  (you can use coconut milk if you prefer.)    For two cups of milk, add 8 tablespoons of chia seeds.   Stir, stir, stir!    Wait 5 to 10 minutes and stir again.   Add cinnamon and maple syrup to taste.  start with a half a teaspoon of cinnamon and two teaspoons of maple syrup.   Add a small amount of sea salt (1/4 tsp) or less.  Stir again and refrigerate overnnite or for about 4 hours.  Serve with fruit topping such as blueberries.  I always keep frozen blueberries on hand and sprinkle a few on top.

No Cooking, about ten minutes total prep time

Yields

4 servings

Ingredients

Almond or coconut milk,  2 cups

Chia seeds, 8 tablespoons

Cinnamon, 1 tsp.

Maple syrup, 1 tbsp



Directions

Pour milk into a 2 cup mixing cup.   Add chia seeds and cinnamon.   Mix thoroughly with a wire wisk.  Let sit for 15 or 20 minutes.  Stir again to make sure the seeds are thoroughly mixed in.   Pour into four small glasses or glass dishes.  Refrigerate.

Notes

Serve topped with fresh or frozen fruit,  chopped Walnuts, or nuts or garnish of your choice.
