30 minutes or less depending on how fast you chop!!
5-6 servings
4 large tomatoes, chopped
1 medium cucumber, peeled and diced
1 bell pepper (either red or green), chopped
1 small onion, diced
2 cloves garlic, minced
2 cups tomato juice or vegetable juice
3 tbsp lime juice or 2 tbsp red wine vinegar
1 cup fresh herbs (tarragon, basil, parsley, chives)
Salt and Tabasco sauce to taste
Place all ingredients except tomato juice in food processor or blender and process until chunky. Transfer to a large bowl and add juice. Chill before serving.
