Green salad with Kale and apple

Yields

about 6 servings

Ingredients

3-4 tablespoons of fresh lemon juice

2-3 tablespoons of olive oil

kosher salt

one bunch of kale, ribs removed, chopped small


Stir together the salt (1/4 teaspoon), lemon juice and olive oil in a bowl.    Add the kale and let it sit while you are preparing the other ingredients.


1/4 cup of dates (I like medjool dates)

one apple, honeycrisp or other variety

I ounce grated cheese, parmesan, romano, pecorino

I/4 cup of slivered almonds

ground black pepper


cut the dates and apple into thin slices.   Add this and the rest of the ingredients to the kale mixture.  Toss well.  Season to taste with salt and pepper.    enjoy!


You can add an additional protein source to this salad, such as chicken, beans, avocado.
