You can vary this recipe with your favorite ingredients. You can add cinnamon to taste. You can substitute maple syrup for the honey and use any kind of vegetable oil you prefer.
4 cups of organic, oldfashioned rolled oats
2 cups shredded coconut
2 cups sliced almonds
3/4 cup of vegetable oil
1/2 cup honey
dried fruit, no added sugar
1 1/2 cups diced apricots
1 cup diced dried figs
1 cup dried cherries
1 cup dried cranberries
1 cup unsalted cashews
Mix the oats, coconut and almonds together. May add cinnamon now.
Stir together the vegetable oil and the honey (or maple syrup.) Pour over oat mixture and stir thoroughly.
Pour on large baking sheet. Spread evenly. Bake in a 350 degree oven for 35-45 minutes. Cool thoroughly. Add dried fruits. Store in airtight containers.
