Spaghetti squash or zoodles are a great pasta alternative and helps you to increase your vegetable intake rather deliciously!
to prepare, wash the spaghetti squash, cut off the ends, then cut crosswise into 1 1/2 inch rings. Place on a foil lined baking sheet. Spray with cooking oil lightly. Bake at 375 for 45 minutes.
Allow to cool slightly and then scrape the squash from the baked rings.
Use as you would cooked pasta in dishes such as Shrimp Scampi.
If using zoodles, either use your spiralizer or purchase them already to cook in the grocery store. Zoodles take less cooking time, and you do not need to turn on the oven.
45 minutes at 375 degrees for spaghetti squash. 10 minutes in skillet for zoodles.
2 large servings
One spaghetti squash. Cooking spray.
or Zoodles from 2-3 zucchini.
Use these as a substitute for pasta noodles.
