Get out a large frying pan and put about 1/2 inch of water in the bottom.
Put the salmon in the pan, skin side down.
Drizzle the salmon with good olive oil. Sprinkle fresh dill or small amount of dried dill or other spices such as thyme on the salmon. You can also sprinkle with lemon. Salmon does not need a lot of extra spice as it is very tasty on it's own!
Cover and cook over medium heat til the salmon is done. The length of time depends on the size of your salmon filet, and will vary between 5-15 minutes. Check for doneness by inserting a fork in the thickest section of the salmon and looking for uniform color through the fish. Do not overcook! Check often for doneness.
When you take the fish out of the pan, the skin will probably stay behind. If it does not, gently scrape off before serving. Serve with lemon wedges and enjoy!
