This has become my favorite go to breakfast. You can use spinach, kale, microgreens, or other greens.
1 clove garlic, sliced thin
1 slice fresh ginger, thin and chopped
1 tbsp. coconut oil or oil of choice
1-2 cups of greens
1-2 eggs
Heat frying pan to medium and melt coconut oil. Add garlic and ginger and lightly sautee. Add greens and sautee for about two minutes until wilted. Flip over to mix the garlic and ginger through the greens.
Cook eggs sunny side up or over easy.
Add spices such as turmeric and cinnamon before eating.
You may have extra greens. Save them for later with a meal or as a snack.
