Yummy Breakfast Cookies


Prep Time

10-15 minutes

Prep Notes

Gather ingredients.  Mash Bananas.  Preheat oven to 350.

Cooking Time

22-25 minutes

Yields

10-12 cookies

Ingredients

3 bananas, mashed

1/2 cup almond or other nut butter

1/4 cup maple syrup

2 cups rolled oats

1/2 cup pumpkin seeds

1/2 cup cranberries or raisins

1/4 cup chia seeds

1 tsp cinnamon

dash of salt

Directions

In large bowl, combine all of the wet ingredients (bananas, almond or nut butter, maple syrup) and mix well together.   Add the dry ingredients and mix well.  Line a cookie sheet with parchment paper and then make 10-12  rounded cookies and drop on cookie sheet.  Bake for 22-25 minutes.

Store in a closed container in refrigerator or freezer to maintain freshness.  These are great for either a quick or leisurely breakfast.

Notes

These will become a favorite!   You could try other dried fruits or seeds in them for variety.
