Zucchini noodles are yummy and healthy. They are also fun to make!
Use either a mandoline (carefully) or a spiralizer to make the noodles. I use both, but prefer using a spiralizer because I think it is safer.
Wash your zucchini and cut off the ends. Then follow the directions on your spiralizer.

About one cup from each medium size zucchini.
Find firm, fresh zucchini.
Once you have the zoodles, you can use them in any recipe you might use pasta noodles for, such as pad thai. They are also good lightly sauteed in butter or olive oil. If you have a young one who likes plain pasta, try substituting zucchini noodles.
